    finely grated lemon rind

Method

  1. Preheat oven to 180C. Line 2 baking trays with baking paper.
  2. Beat the softened butter, caster sugar, and grated lemon rind in a bowl with an electric mixer until creamy. Add the eggs and beat until well combined. Stir in self-raising flour and custard powder.
  3. To prepare the biscuits, spread the desiccated coconut on a plate. Take spoonfuls of the mixture and roll them into balls. Coat the balls lightly by rolling them in the coconut. Place them on trays lined with parchment paper, while ensuring there's enough space between each ball to prevent them from sticking together. Use the end of a wooden spoon to create an indentation in the centre of each ball. Then, add ½ tsp of Dream Caribbean Guava Jelly into each indentation.
  4. Bake for 15 minutes or until lightly golden. , swapping trays halfway through cooking. Remove from oven. Set aside to cool completely.
