    Chicken Thighs (bone in and skin on)
  • 1 tbsp
    Olive Oil
  • 50g
    Mild Bajan Seasoning
  • 1 tbsp
    Onion Powder
  • 2
    Cloves of garlic (finely minced)
  • 120g
    Bajan Mango Chutney (approx 6 Tbsps)
  • 1 tsp
    Curry Powder
  • 1/4 tsp
    Cayene Powder
  • 1/4 tsp
    Salt
  • 1/8 tsp
    Black Peper

Method

  1. Preheat your oven to 200°C.(400°F)
  2. In a medium bowl, combine the olive oil, Mild Bajan Seasoning, onion powder and minced garlic.
  3. Mix in the Bajan Mango Chutney, curry powder, cayenne, salt and black pepper.
  4. Place the chicken thighs in a suitable dish or oven tray lined with foil.
  5. Spread half the paste under the skin of the chicken and the remainder on top of the chicken skin. Don't spread any on the bottom of the chicken.
  6. Place the chicken into the oven. Cook for 45 minutes. If you'd like the chicken with a crisper top, you can broil it for 3-4 minutes at the end of cooking.
  7. Serve with cooked white basmati rice or pilau rice garnished with a few sprigs of Coriander or Cilantro.
