Ingredients

  • 500g
    skinless, boneless chunky white fish fillet (such as Cod or Haddock)
  • 100g
    Plain Flour
  • 3
    large Eggs Beaten
  • 200g
    dried breadcrumbs
  • 20g
    Caribbean Dried Seasoning
  • Pinch
    Tumeric (Optional)
  • Oil for Frying
Ingredients For the Dip
  • 280g
    Cream Cheese (any flavour)
  • 250g
    Mayonaise
  • 336g
    Red Onion Pepper Jelly

Method

  1. Mix the breadcrumbs and dried seasoning together in a bowl, If you want the breadcrumbs to be golden then mix through the turmeric. Set aside. in a separate bowl beat the 3 eggs. In another bowl add the flour
  2. cut the fish fillets into neat thumb-sized strips.
  3. Dredge each fish finger in flour, then egg, then breadcrumbs. Ensure complete coating and place on a plate.
  4. To cook the fingers heat the oil in a frying pan and cook the fingers for 3-4 mins on each side. Place on a tray lined with kitchen paper and keep warm in a low oven. Alternatively, preheat the oven to 200C/180C fan/ gas mark 6. Brush a tray with a little oil, cook the fish fingers for about 10 - 12 mins until golden and cooked through, and turn over halfway through cooking time.

Method For the Dip

  1. Combine the cream cheese and mayonnaise in a bowl until completely blended
  2. Add the Red onion Pepper jelly on top
  3. Serve as a dip with the Fish Fingers

Notes

If you would like it a bit hotter!! add a dollop of any of our hot pepper sauces on the side or in the dip.
