Spicy Avocado Soup is a sophisticated fusion of rich flavours and creamy textures. This exquisite soup is meticulously crafted with luscious avocados, vibrant green seasoning, savoury chicken stock, luxurious cream, and a tantalizing hint of pepper sauce.

Ingredients

  • 60ml
    Olive Oil
  • 1
    Large white Onion Chopped
  • 2
    Large avocados, peeled, pitted chopped
  • 10ml
    (2 tsp) VIking Green Herb Seasoning
  • 1
    325g can of sweetcorn drained
  • 2
    tsp coarse or Kosher salt
  • 1/4
    tsp white pepper
  • 30ml
    Delish Hot pepersauce with cucumber
  • 1 litre
    Chicken stock made with 2 chicken stock cubes
  • 236ml
    Heavy Cream or Greek Yoghurt
  • Garnish
    Avaado slices, sweet corn and Coriander leaves

Method

  1. Place the avocados, green seasoning, cream, salt, pepper, sweetcorn and pepper sauce in a blender or food processor and puree until smooth
  2. In a large pot over medium-low heat add the olive oil and the onion. Cook while stirring often for 7 minutes, or until the onion is soft and translucent.
  3. Add the chicken broth and simmer for a1-2 minutes
  4. Stir in the avocado mixture and simmer for another 1-2 minutes. Adjust seasoning to taste.
  5. Ladle the soup into bowls and garnish with slices of avocado some corn kernels and coriander leaves plus a drizzle of cream.

Notes

This soup can work as a chilled soup also.

You can try hotter pepper sauces from our range f you want to turn up the heat a bit more. You can also use Star Hot Bajan Seasoning for a spicier flavour
