  • 2-3 kg
    Fresh Chicken Portions (skin on)
  • 3 tsp
    Dried Caribbean Seasoning
  • 280g
    Star Hot Bajan Seasoning
  • 2
    limes or lemon
  • Salt & Pepper to taste

Method

  1. Trim chicken of excess fat and pat dry with a cloth or paper towel.
  2. in a bowl or other suitable container, rub the chicken with Lime or Lemon, and 3 teaspoons of Caribbean Dried seasoning and sprinkle with salt and pepper.
  3. Then add about 1/2 jar of the Hot Bajan Seasoning and baste all over the chicken. Allow to marinate in the fridge until ready to grill or bake.
  4. Preheat oven to 200°c (400°F).
  5. Roast chicken until the skin is nicely browned for about 40-45 minutes; depending on the size of your chicken pieces. An instant-read thermometer inserted near the bone should read 74°C or (165°F).
  6. GRILLING: Preheat the grill to medium-high heat. Place chicken on the grill and grill for about 10-15 minutes on each side. You may need to turn the chicken occasionally on each side until it is cooked all the way. Do this in batches if you have a small grill.
  7. BASTING: Whilst baking or grilling, you may occasionally baste with Hot Bajan seasoning and remaining marinade from the chicken.
