    Salmon Fillets (Approx 2)
  • 12ml
    (2tsp) Olive oil
  • 6g
    (1tsp) Dream Caribbean Dried Seasoning
  • 18ml
    (1 tbsp) Caribbean Treats Mango Jam
  • 1/2
    Lime

Method

  1. Preheat oven to 200 degrees celcius (400°F)
  2. Rub the salmon fillets with the olive oil then sprinkle the dried seasoning evenly over the flesh of the salmon.
  3. Place salmon, skin side down on a small baking tray or pan that's been covered with parchment paper.
  4. Meanwhile, in a small bowl, whisk together the mango jam and lime juice until blended.
  5. Cook the salmon for 12-15 minutes, brushing it with the jam mixture every 2-3 minutes using a basting brush.

Notes

"How can you tell if salmon is properly cooked? Simply press the salmon gently with the back of a fork and see if it flakes easily. If the flesh separates easily, then it is done. Additionally, if you are starting to see hints of albumin ( the white streaky stuff), it is likely done. However, if you see a lot of albumin, then you have overcooked it."
